Quicky Hummus and Jalapenos
I ts high time I get to serious blogging now... Tat doesnt mean I have not been cooking.. Its just that I have not been able to muster time in drafting the post.
Climate has been quite dull... forecast is predicted to be cloudy and gray...thoughout this week... And to worsen the bit.. with thunder and showers in the weekend... Hate it all the more..
Anyways.. bringing u today a very basic hummus receipe I tried.. made them in few minutes.. My first attempt at home... Tasted for the first time at my son's plagroup a few month's ago. Had loved it...Toddlers and Infants are served hummus during snacking time... Since then a packed of seasame seeds have been lying around..
INGREDIENTS:
| Boiled Chick Peas | 150gm |
| Lemon Juice | Roughly 2 Tblspn |
| Garlic | 1 pod |
| Olive Oil | 2-4 Tblspn |
| Black Pepper | 1/2 -3/4th Tsp |
| Seasame Seeds | 1.5 Tblspn |
| Salt | To Taste |
Jalapenos | Few |
DIRECTIONS:
Combine Seasame seeds with oil in a blender and grind until we obtain a smooth Tahini Paste.
To this paste , add boiled chickpeas( reserve a few for serving) , half the lemon juice , garlic , black pepper and salt. Grind until smooth .Do check for taste and now add the rest of lemon juice as desired . Pour the olive oil on the top , gently mixing.My hummus turned to be a bit garlicky...so I ground the hummus with jalapenos and it was just ideal for the evening snack.I would suggest to use just 1 garlic pod instead of 2 like I did for the whole can of chickpeas. . Serve the jalapeno flavoured hummus with the reseved chickpeas, drizzle of olive oil and carrot sticks.

Can I call it Tamarind dates Dip or Imli ka Chutney ?
T here are many times we prepare quick and with minimum ingredients.. and they taste divine and bliss than the ones we do with elaborate preparations.
Tamarind Dates Dip or Red( Lal) Chutney or shall I say just Imli ka Chutney.. is one among them.
Because I make it at home love the addition of Dates and make it more healthy.
My normal method would include boiling the tamarind , dates and jaggery in water for atleast 15 minutes and pulsating them in blender on cooling. But this one was just on the go..... 15 Min.. and ready!
I didnt do any specific planning to prepare this.. Felt just yogurt dip would be incomplete without imli ka chutney for this savory snack.
TAMARIND DATES DIP

INGREDIENTS:
| Tamarind | 1 Cup |
| Jaggery | Less than 1/2 Cup |
| Seedless Dates | 10-12 Nos |
| Red Chilli Powder | 1/2 -1 Tsp |
| Cumin Powder | 1/2 Tsp |
| Red Chillies flakes | 1/4-1/2 Tsp |
| Salt & Black Pepper | A Pinch |
DIRECTIONS:
- Soak Handful of Tamarind in a microwave bowl and warm it for 2 min. Once it cools down and gets bit soft , add in the blender along with jaggery & dates .Blend them all well.Add few drops of water to get the right consistency.
- Dry roast cumin seeds in a pan and corsely grind them.Drop in the ground cumin powder , red chilli powder and a pinch of salt.Alternatively just add the store bought cumin powder.Garnish with sprinklers of crushed chillies. Serve them along with samosa's or could use it chat as well...
- Just pour the required amount of chutney's to be served in a serving bowl and freeze the rest immediately in an air tight container. It would stay fresh for upto 2 months. Just deforst them a couple of hours before use .

Cucumber Raitha | A side for Flat bread's, Pulav & Biryani's
A total no brainer recipe that can be whipped up so instantaneously .. After you have your family or your guests at the dinner table, this can be made then.. 5 Minutes is all that it takes !!
I made this Cucumber Raitha to pair it along with Aloo Paratha.. Going through my blog recipe card, I realised, my space is dearth in need of Paratha's, Raitha's and soo many basics.. Just that I make them and we have it for the meal. Never occured that I need to share some comfort,quicky cooking in my blog too..
So here it is..
CUCUMBER RAITHA Total Time taken: 5 MinutesServes 2 INGREDIENTS 1 Cup Low fat Yogurt 6 inches Cucumber 1/4 tsp. Pepper 1/2 tsp. Chilli Powder 1/2 tsp. Chat masala powder Salt to taste . I have added approximately 1/2 tsp. 1 tsp. chopped Coriander leaves for garnishing METHOD

Yogurt Mint Dip
M y blog has become more like a personal diary where I pen down a quick summing up of my activities from the week .. jot my pep talks , share my feelings , talk about my ups and downs... along with recipes offcourse...
With both my boys trying to cope with the flu season , older one has just recovered and got back to work. Lil V is still at his peak with cold and his immune system really need to show up n support.
IPhone 4 .. one of my best surprises I got from H for Birthday.. though really belated.. Its worth the wait. H kept telling me.. your patience for ur present will pay off.. So keep guessing.. I Phone 4 has made my life lot more easier.. I dont sit long hours on my laptop.. ...Thank U H... U rock :)
During the navrathri festival , we had a few friends over for dinner .So prepared garama garam No garlic No onion samosa's and paired it with imli ka chutney & yogurt dip. Flavours were just perfect and lived upto my expectation. Pair it up with Samosa's or Papad's..Do it in ur own style and to suit ur pallete.. . Just takes about 5 minutes if your chutney is ready ..
INGREDIENTS:
| Mint leaves | 1/4th Cup |
| Low Fat Stirred Yogurt | 1 -1 1/4th Cup |
| Coriander- Mint Chutney | 2 Tblspn |
| Sugar | 3/4th Tsp |
| Salt | A Pinch |
DIRECTIONS:
- Combine half of low fat yogurt and Mint leaves in a blender and give it a good whizzz. Add in 2 tablespoon full of prepared coriander mint chutney and another one whizz.Dont forget to add in the sugar along with the chutney for whizz.
- In a serving bowl , add the yogurt -mint mix and combine it with the rest of the yogurt . Give it a good whirl with a tee spoon.garnish with finely chopped mint and place it in the refrigerator.
- Take it out just before serving.
