Bean & Veg salad..with Yogurt Dressing
Thank you gals for all the wonderful response for the birthday party menu...Do keep pinging me if you come across any other lovely game or a dish... There is still a week for the D- Date..
Today's Salad is wholesome meal by itself... H and I have decided to have a bowl of Salad atleast 2wice a week.. before dinner.. so that it will reduce our intake of rice n chapathi's .. Believe me.. It just works.. This week has been successful with 2 variety of salad... and they could be made in a jiffy :)
Preparation time : 15 min
INGREDIENTS :
Cooked Black eye beans from Can | Handful |
Green Pepper | 1/2 nos chopped finely |
Lettuce | 2 Leaves chopped |
Tomato | 2 nos small in size chopped finely |
Cucumber | 1.5 inch chopped into small pieces |
Carrot | 1.5 inch chopped into small pieces |
For the Salad dressing
Low fat stirred yogurt | 1 Cup |
Lemon Juice | 1 Tblspn |
Mint leaves | handful chopped finely |
Garlic Pod | 1 nos chopped finely |
Salt | To Taste |
Black Pepper | 1/2 Tsp |
DIRECTIONS:
- Mix all the vegetables and the bean in a bowl .
- For the salad dressing , mix the yogurt , lemon juice ,garlic , mint leaves ,salt and pepper and stir it well.
- Add it to the vegetables in the bowl and mix well. Put it in the fridge for 30 minutes and serve it cold .
- I have used cold low fat yogurt.So served it at once after I prepared.
