Methi Thepla | Fenugreek leaves flatbread

Thepla's are a favourite snack flatbread delicatessen from the state of Gujrat in India. There are many varieties of Thepla like Spinach Thepla ,Coriander ones,Carrot Thepla,Dudhi thepla and more..

Methi Theplas are flatbreads made with fresh Methi/Fenugreek leaves.Light ,healthy and an appetising snack that is perfect for picnics, day trips or long trips.I remember carrying them to Switzerland too,a decade years before ,and eating them for 3 days. This mildly spiced savoury flatbread is foolproof on its own or some readymade ketchup, pickle and curd.
Roll it and gobble them up !!!

Thepla's are a great way of including greens and yogurt in the form of a flatbread, all in a roll, straight into their diet to treat your little ones at home or pack their lunches for school. My son V who is a fussy eater enjoyed his first encounter with thepla's . He did not refuse !! Isnt this an accomplishment for mum's like us ??

I had received an email from Indus Ladies about Kids Lunch Box Recipes event. What a perfect timing of the event invite. All the recipes sent for the event gets compiled into an e-Recipe Book.I am so damn glad that this recipe of mine will be a part of many little kiddos daily diet.
Indus Ladies Kids lunch box recipes

    Yields 24-26 Thepla's

    Ingredients :

1 Bunch of Methi : cleaned, washed n chopped finely- Rougly 1 cup
    2 Cups of Wheat flour
    1 tsp Turmeric
1 tsp Chilli powder or  2 Green chilli crushed ( Optional)
    3/4-1 tsp  Cumin Powder
    1/2 tsp Ajwain
    1/2 tsp Asfoetida/Hing
    Salt to taste
    3/4 -1 Cup Yogurt
    1 tbsp.Oil
More Oil for cooking the thepla’s
***If you are cooking for kids , omit the Ajwain and reduce the chilli powder by half.
    * Cup size referred here is an IKEA sized CUP.

    Directions:
    • In a large dry mixing bowl, add the wheat flour also known as Aata and other dry. Make a large deep dip in the middle of the flour and now add yogurt. If the yogurt is quite thick, dilute it with 1/4th portion of water.
    • Knead the dough for atleast 2 minutes until all the flour and yogurt has combined. Add the oil on your palm and let it drip over the dough too. Doing this helps to remove the sticky dough off your hand ,as you knead the dough for another 5 minutes. Set it aside for at least 30 minutes .
    • I have used an Ikea Cup for measurement. This dough yields me 24-26 thepla’s.

    •  Make small equal portions of the dough in the size of a ping pong ball. I would portion the dough in a size that fits inside my palm. A size similar to the size of chapatti dough.
    • Lightly oil your palm and pinch out small 5-6 equal sized dough balls.

    •  Taking one dough ball at a time,Flatten these balls with your palm, dust with whole wheat flour and roll out 5-6 inches. If the dough begins to stick, dust some more flour and roll out.
    • Cook the thepla on a tava/skillet, until the dough changes color and looks dry. Flip it over, using a spatula and you should find it slightly golden brown.Apply few drops of oil and cook it all the way through by gently pressing with the spatula on either side.

    • Repeat the process with the rest of the dough. As you make the thepla’s ,store them in a casserole to keep it soft and warm.Serve the hot theplas with aloo jeera, yogurt and pickle. When you are serving your little ones, just roll it in a tissue and give it to them or serve it with some ketchup and yogurt.

    Herby Potato Rösti

Image and video hosting by TinyPic

I had promised H a new snack if he comes home early on this lazy snowy day.. And he suddenly pinged a while later.. saying be ready with ur Surprise snack .. Will b home in 20 minutes...

Wondering wot to do?? Immediately started browsing this lovely easy vegetarian book that I picked from the library.Came across this yummy potato snack.. Rösti. But it had different seasoning like Sage leaves & thyme. Didnt have any of them.. Was planning for an alternative seasoning.. just then my neighbour Granny came over and handed over a Shortbread cookies for Chritsmas.. They were lovely
.. I was asking her to suggest me a sesoning .. and she said.. I could use Coriander and Parsley in Rösti and they will make a lovely Scandivian dish.
H thoroughly enjoyed & relished the taste .My 22 months old moster loved it for it was just melting in his mouth ... Thats the verdict..
Sending it across to WYF: Tea Time Snack event organised by EC of  Simple India Food

Frying creates a lovely crispy crusty layer just apt for Rösti. They are just delicious by itself or could be served with a green salad.

    INGREDIENTS:

    Large Potato: 2 Nos
    Chopped Coriander Leaves: 3-4 Tsp
    Dried Parsley: 1.5Tsp
    Cheddar Cheese: 3-4 Tsp
    Olive Oil: 4  Tsp
    Salt: To Taste
Freshly Ground Pepper: 1/2 -3/4 tsp

    DIRECTIONS:
    • Peel the potatoes and grate on the coarse side of the grater to get the texture. Pat dry using a kitchen paper and put it in a bowl.
    • Finely chop coriander leaves . Add the herbs to the potato mixture and mix them well. Add the cheddar cheese , required salt and pepper and mix well.
    • Using Hands , shape a heapful tablespoon into a ball.Repeat the process with the rest of the mixture.
    • Heat Oil in a non stick fry pan , Now add the potato cake to the pan and flatten it with a long handled turner. Fry until golden brown in a low flame. Turn the Rösti over and cook for another 10-15 minutes until golden and cooked thoroughly.
    • Repeat the process with the rest of the potato cakes. Transfer the rösti to a serving plate and serve with ketchup or with green salad.

    KITCHEN NOTES:
    • We can also par boil the potatoes before grating. I havent boiled the potatoes in this procedure.
    • Also we can use butter instead of Olive oil for a lovely butter flavour. Increase the cheese for the cheesy twist.
    • I have added Salt & pepper while preparing the potato cakes. But some people prefer to add them just over the top before serving.

    Cheers

    Aloo Methi Paratha

We are always fond of paratha's as its quite versatile by itself and we dont need much to go with it.. Just a pickle or yogurt shud do... :)
I learnt this recipe from my gujarathi aunt over the telephone..My first trial wasnt 100% successful becoz of the variety of the potatoes... But I still managed to make it well somehow... by trying a different method for sealing.
My second attempt at it .. was simply easy peesy.. no struggle..Thanks to the potatoes..this time :)

    INGREDIENTS:

    For Dough Preparation:

    Whole Wheat Flour
    2 cups
    OIl
    2 tsp
    Salt
    To taste
    Water
    Nearly 1 1/4 cup

    For Filling:

    Potatoes
    3 Nos boiled & mashed
    Methi Leaves
1 Bunch washed, dried and finely chopped
    Coriander Leaves
    1/4 cup finely chopped
    Green Chillies
    1 tsp finely chopped
    Freshly grated Ginger
    1 tsp
    Garlic
    1 pod chopped finely (optional)
    Turmeric powder
    1/2 tsp
    Coriander Powder
    1 tsp
    Mango Powder
    1/2 tsp
    Cumin Seeds
    1/2 tsp
    ajwain seeds
    3/4 tsp
    Salt
    To Taste
    Oil
    1 tsp

    DIRECTIONS:

    For the Dough:
    • Combine all the ingredients & knead them into a soft dough using water. Make balls out of it and keep it aside.
    For Filling:
    • Heat 1 tsp of oil in a kadai and add cumin seeds. Once they splutter add the chopped methi leaves and saute them for 2 minutes. Add Turmeric, green chillies , ginger , salt & coriander powder.Saute for 1 more min.
    • Add the potatoes and saute for 1 more min. Turn of the gas and now add the chopped coriander leaves ,amchur powder & ajwain seeds to the potato methi mixture.
    • Combine all of them nicely and make small balls of the filling mixture.
    For the Aloo Methi Paratha

    • Roll out one portion of the dough into a small circle using the whole wheat flour for dusting. Place one ball of the aloo methi filling mixture in the centre of the circle. Seal tightly by bring sides together so that the mixture doesnt come out.

Flatten these balls again and roll like any other paratha.
    • Cook on a tava, using oil/ghee until both the sides are golden brown.
    • Repeat the process with the rest of the dough portions.
    • Serve hot with Yogurt or Mixed Pickle.

    Kitchen Notes:
If the potatoes becomes sticky during preparation , we could dust the potato mash powder over it... and carry on with the preparation.. I got this tip from my aunt, when I told her about my unsuccessful attempt.
Incase fresh methi leaves are not available use kasthuri methi .

Sending this Aloo Methi Delight to the Weekend Herb Blogging # 204, hosted this week by Susan of The Well Seasoned Cook. The event started by Kalyn, is now in the nurturing hands of Haalo of Cook (Almost) Anything Atleast Once.

    Chole Puri with Onion-Cucumber raitha

Call it Chole Puri or Chana Bhatura or Chick pea curry with Puffed Flat bread ,its the same and something which is quite popular in many Northindian houses. Quite simple to make & anytime one thinks of this dish, we finally end up drooling.
An interesting story goes behind the making.
My husband calls a married ( bachelor friend): Tring Tring... wots up? How was your day? Come over for Dinner tonite...
Friend : Good going..No da... Some other day.. Will be picking up Chicken Curry from a friend's place..
Husband :No excuses.. You can pack it for your Sunday Lunch.. Sandy is making Puri Masal..
Friend: Is it?? Will come straight from work... Shall Collect the Chicken tommorowWinking
Well tats exactly how a puri sabji can ask people to make choices.Later I decided... to make Puri & Chana masala rather than Puri Masal .Having used too much of potatoes last week in my cooking ,opted for Legumes instead. Happy

    Posted by Picasa

Listing below the ingredients for my version of
    Puri:
    1. 2 cups of wheat flour
    2. salt to taste
    3. 1/2 tsp pepper
    4. 1/2 tsp cumin seeds
    5. 1/2 tsp sugar
    6. 2-3 tsp oil
    7. Water
    8. Extra oil for frying
    Method:
Knead all the ingredients together and bind to a soft dough with water. Keep it aside for an hour or so. Make small balls out of the dough & roll out thinly. Heat oil in a kadai until its really hot. Before starting to fry , test if the oil is hot enough. Drop a small piece of the dough into the oil & and it should immediately rise high on the top. Now add the spread out dough one by one to the heated oil . Using a slotted spatula press the puri in the centre & it should instantly puff up. Fry on either side once. At once remove the hot puffed puri's and place it onto a kitchen roll to remove the excess oil. Repeat the same process to make puffed puri's.

PS: Do fry the puri's just before serving.

    Chole(Chana Masala):
    1. Chana ( Chick Pea) : 1.5 cups
    2. Onion : 2 Small Nos . Chopped nicely
    3. Tomato : 1 Big Nos .Diced into small pieces
    4. Tomato Puree : 2 Tsp
    5. Cumin Seeds(Jeera) : 1 tsp
    6. Ginger : freshly grated 1 tsp
    7. Crushed Green Chilli : 1/2 tsp
    8. Turmeric Powder : 1/2 tsp
    9. red chilli powder:to taste
    10. Whole Garam Masalas :(Star Anise : 1, Bay Leaf:1 , Cloves - 5-6Nos , Pepper :5-6 Nos,Cinamon Stick - 1 inch)
    11. Chole Masala : 2 tsp .Incase Chole Masala is unavailable use a combination of(Dhaniya Jeera Powder : 2 tsp, garam masala : 1 tsp, Amchur powder/Anardana Powder: 1 tsp) I used MDH Chole masala this time. I have also tried without the masala with the above combination before.
    12. Coriander leaves for Garnishing
    13. Lemon Juice : 1 tsp
    Method :
    1. Soak Chana(Chick pea) 3 -4 hours in sufficient warm water with a pinch of Black Salt & pressure cook until soft. Add a pinch of Salt & Sugar while cooking chana .It works well as a cooking agent.
My aunt gave me this tip. This avoids soaking overnite. Alternatively use 1 Can of Boiled Chick pea.
    2. Heat oil in a kadai , add Cumin Seeds .Once they splutter add Ginger ( Garlic is optional), green chillies & onions. Saute them for a few minutes until raw smell is eliminated. Adding a pinch of salt to onions evaporates the water content quickly. Now add diced tomatoes and saute them until it mixes well with the onion mixture. Keep this mixture aside to cool down a bit . Blend this mixture well in a blender .
    3. Again add 2 tsp oil in a kadai . now add all the whole garam masalas . saute them for 1-2 min. Now add the onion - tomato blend & saute them for 5 more min. In the mean while add the tomato puree, turmeric powder, chilli powder , chole masala & required salt.
    4. Add the cooked Chana to this gravy with 1 cup of water . Let this Chana cook in a low flame with a closed lid for another 4-5 min so that the spices blend well with the Chana . Saute them once or twice while cooking .
    5. Add a dash of Lemon juice to Chole & Garnish it with freshly chopped coriander leaves.

    Onion Cucumber Raitha

    Ingredients:
    1. Yogurt : 1 cup . I used Low fat stirred yogurt for this raitha.
    2. Onion :1 small nos
    3. Cucumber: 6 inches
    4. Coriander leaves
    5. Salt to taste
    6. Pepper : 1/4 tsp
    7. Chilli Powder : 1/2 tsp
    8. Chat masala powder: 1/2 tsp
    9. Oil : 1/2 tsp
    Method:
    1. Slice the onions length wise & cucumber into very tiny pieces.
    2. Heat oil in a kadai & saute the onions for 2 min. Let it not turn brown.
    3. In a clean serving bowl , Add chopped cucumber , sauted onions, about 1/2 tsp salt, pepper & yogurt. Stir them well until they get mixed.
    4. Now garnish the raitha with chopped coriander leaves & alternative lines of chilli powder & chat powder.
    5. Onion Cucumber Raitha is ready to be served with Chole & Puri.
