Rajma Chawal - Kidney Beans Rice
After preparing Tortilla Wraps with Kidney Beans, I was wondering what to cook with the left over Kidney Beans...??? I am not a big fan of Rice varieties.. Will wave a flag for a Paratha instead or Phulka with sabji .
Pondering and wandering a bit around the house ,I decided to prepare Rajma Chawal ( Kidney Beans Rice)..H is quite flexible in his choices for food and this definitely gives me a chance to try and experiment :) . Can U believe I have never made this one pot meal before...Surprising isnt it!!! Prepared this lovely Mixed Rice without a side for H's lunch to work .. and I enjoyed it too the next day with lil V.
INGREDIENTS:
Rice ( Chawal)
Basmathi Rice | 2 Cups |
Whole Garam Masala's | Bay Leaf - 1 Cinamon Stick - 1" Star anise - 1 Cinamon - 2 Cloves - 3 |
Lemon Juice | 1 Tsp |
Ghee | 1 Tsp |
Salt | To Taste |
Kidney Beans ( Rajma Masala)
Cooked Kidney Beans from the Can | 200gm |
Medium sized Onion | 1 Nos |
Medium sized Tomato | 2 Nos |
Tomato Puree | 0.5 Tsp |
Mixed Herbs | 1 Tsp |
Chilli Powder | 1/2 Tsp |
Coriander- Cumin (Dhaniya- Jeera) Powder | 1 Tsp |
Garam Masala | 1/2 Tsp |
Oil | 1 Tsp |
Salt | To Taste |
Crushed Garlic | 1 Tsp |
Finely Chopped Ginger | 1 Tsp |
Chopped Coriander leaves | For Garnishing |
DIRECTIONS:
Rice Preparation:
Wash the Basmathi Rice and keep it aside for 20 Minutes. Heat 1 tsp ghee in a non stick pan . Drop in Shahi Jeera & the whole garam masala's. Fry for a minute and now add the rice. Stir fry the Rice for another 2 minutes. Add in 2 times the water and allow it to boil. Sprinkle required salt and a tsp of lemon juice When the water is nearly gone , just enough to cover the quantity of rice .Cover the Pot with a Lid in low flame. Turn it off after 5 minutes and allow it to cool for a while.
Making of Rajma Masala :
Lets work on the Rajma side by side. Heat oil in a wok. Drop in Cumin seeds .Once the cumin seeds splutter ,throw in ginger , garlic and sliced onions. Fry until the onions turn light brown. Add in chopped tomatoes followed by 1/2 tsp of Tomato concentrate ,spice powders and required salt. Cook until tomatoes are soft. Drop in the cooked Kidney beans and give it a godo stir.Add required water and check the consistency. Let it not be too much watery... because we need to mix in the cooked rice.
Syncing UP:
Once desired consistency is achieved , add in the cooked basmathi rice and mix them well. Make sure the rice doesnt get too much mashed while mixing...Check for Salt and more if required. Garnish with coriander leaves .Serve Rajma Chawal with Raitha or just Yogurt.. I packed it for H's Lunch box and he enjoyed them with a packet of crisps :)
