Mixed Vegetable Kashmiri Korma for Curry Nights In #indiancurrychallenge
Mixed Vegetables sauted in a Creamy Coconut sauce with a blend of aromatic spices and herbs.
National Curry Week is celebrated between the 12th - 18th of October in UK. With the Tiger Tiger Quick Cook sauces, it is easy to stir up a delicious curry in 15 - 20 minutes. Weekend in force, all that you want to do is to put up your feet and watch your favourite movie or reality show. We enjoy watching Dance Plus program, relayed on Star Plus every Sunday Night where talent has brought upfront into a distintive standard.
The participants in that program are absolutely out of the world with an extra ordinary ability. Be it Hardik the rubber boy, Popping tikko or the mass dance gang - the V company or the Question mark crew, who are masters of formations. This weekend being the grand finale, we didn't want to miss a sec of the episode, excitedly watching every performance , be it the judges , captains or the eliminated participants. This curry served the whole idea. With the Kashmiri Korma quick sauce, I made up a Mixed Vegetable Kashmiri Korma in a jiffy.
The house was filled with the aroma of coconut and spices, just as I stirred the sauce into the vegetables. This korma tasted absolutely fab and made our weekend night special without any elaborate cooking.
Ingredients:
1 Packet of Tiger Tiger Kashmiri Korma Quick Sauce
300 gm of Mixed Vegetables ( I have used Carrots, Potatoes,Beans and Peas)
1/2 Red Onion , chopped finely
1/2 tsp Cumin Seeds
1/2 tsp Chilli Powder
1/2 tsp Salt
1/4 tsp Turmeric Powder
1/2 cup of water
1 tsp Oil
Directions:
Wash and cut the vegetables of your choice .Alternatively use frozen mixed vegetable bag.
Heat oil in a pan and add cumin seeds. When they begin to crackle, add chopped onions. Saute for about 2 minutes, until they get translucent . At this stage add the mixed vegetables along with salt and turmeric powder. Give them a good mix. Add about half a cup of water to vegetable mix, cover with lid and cook for 7-10 minutes. Check in between , so that the vegetables don't get mushy.
Once the vegetables are cooked, pour in the quick sauce sachet , allowing the mixture to cook in medium heat for 7 minutes. Check for salt and season if required. Remove the pan of the heat and serve with steaming white rice or flatbreads.
