When you hear words like Free From, Gluten Free, Nut Free , Dairy Free, yet offering delicious tasting food for all to enjoy , I really grew a bit curious !! How could one enjoy a range of tasty food,regardless of allergies,intolerances and dietary restraints ? Well the answer is COORI .

I could definitely not deny, when I received an email to attend a Cook Up event with COORI. I had no clue what to expect in there. There was a small bunch of people having a little chit chat and enjoying the delicacies , mostly Vegan and #FreeFrom. As I entered into Foodat52 Cookery School, the ambience was absolutely contemporary, welcoming and a feeling there is more to this. Hannah and her colleagues welcomed me warmly with a drink and giving me an intro to different cooked up dishes .
We were then given a brief about the cook up demonstration and hands on we were going to experience. I had never been to a cooking school , nor undergone any formal training..So this was really exciting !! As we walked down the stairs, there was huge table , spaced out cooking stations with neatly arranged ingredients just what was needed to cook. But what were we cooking ?? Totally clueless ! I had missed the first 5 minutes of briefing as I was busy shooting the contemporary lounge at Foodat52.
Julia and Claudia stood amidst all of us, giving us clear step by step instructions and showed us how to make a Pasta Dough , absolutely gluten free, wheat free , dairy free and nut free. The Pasta mix essentially,is a combination of Rice Flour, Corn Flour and Potato starch. To it we added a pinch of salt , about 125% of water and began kneading. All the muscle power went into kneading and stretching the dough. A good quantity of Olive oil and more kneading , until we obtain a good dough. Neither too hard , nor too soft . Wrapped them all in cling film and set it aside to rest for a couple of minutes.
Julia then showed us how to roll the dough thin, make circular shapes , fill in with some dairy or non dairy filling and make some Raviolis. Just as novice students will follow their teachers, I tried following to T and made my ravioli's. Over a pot of boiling water, we dropped our filled ravioli's allowing it to cook for 8-10 minutes approximately. Drain them and serve the Free from Ravioli's on a bed of Arabiata Sauce or Pesto Sauce. Claudia made me a butter with a sage dressing and we gently coated my first hand made ravioli's in them.
What a delight !! Absolute heaven ! Can't thank the family of Coori for considering me for the event. I have so much to take back from the evening. Also that Food can be tasty , even though its Free from. All that we need to do is to make careful choices in our ingredients. This was not all ! We were sent back home with a careful selection of Pasta Mix, Gnocchi, Fusilli Pasta, Biscotti and many more.. It was a lovely goodie bag and I am looking forward to cooking up from a Free From selection.
