Baking | Anzac Biscuits ... Its Eggless too !


An Ambrosial Treat!! I want more !! These delightful Oaty, Coconuty biscuits have got a history! I have not been aware of its historic presence, until my neighbour Sara mentioned it to me amidst our habitual catchup. A for Australia , Nz for NewZeland!! No wonder these biscuits are special !! Having said that, they are scrumptious,delicious and what not. Nom Nom.. and Effortless!

I looked up the google, reading indepth of its existence. ANZAC stands for Australia and New Zeland Army Corps that was established in the World War.  Wives used to send these biscuits to their soldier husbands whilst in war since the ingredients used in the making do not perish easily.

These biscuits should have been made a week before and embellished my blog wall. But a couple of engagements in my personal front held me back from baking these delectable goodies. Today, apart from the blah blah chores and routine, I had made up mind to bake them , hoping they turn out just as it should .. Voila !!


My little helpers at home , V and S were all over the kitchen, trying to fetch the ingredients for the biscuits. Oats, Desicated Coconut , Icecream pictured Soda Bicarbonate, Yumm Golden Syrup and more. Trying to be the Big B, V helped his mama weighing all the ingredients. But when it came to melting the butter and golden syrup, V immediately said " Amma its dangerous for me to help you on the hob . You do the big people's job, while I help you to mix them when its all ready. " Aww my handy helper is growing old and is realising things around him. I am soo much going to miss this stage !!!

 Porridge is Our new family favourite !! V loves the golden syrup dripping over his Oats and milk , when it goes into the oven to get made. His Mama is getting smarter now a days and hence has decided to include oats in our tea time biscuits too :) This Oat enriched Biscuit has everything from our morning goodness with a little luxury and its all ready in 20 minutes.



The  orginal recipe called for about 100 g of Butter and 1 tblsp of Golden syrup. But when I stirred the mixtures together, It did not show any sign of coming together. I had to melt another 25g of Butter and 1 tblspn of Golden Syrup.. and it did the job.

ANZAC BISCUITS


 Prep Time: 10 minutes
 Baking Time: 8-10 Min for each batch
 Makes : 30 Biscuits approx.
 Recipe adapted  from Baking Mad
 
INGREDIENTS:

100 g Plain Flour
85 g Rolled Oats
85 g Desiccated Coconut
85 g Unrefined Golden Caster Sugar
125 g Unsalted Butter
2 Tbsp. Golden Syrup
2 Tbsp. Boiling Water
1 tsp Soda Bicarbonate

DIRECTIONS:
  •  Preheat oven to 160°C fan, gas mark 4. Lay a Greaseproof sheet over the wire rack and gently spread some butter.
  • In a large bowl, bring together Oats, Coconut, Flour and Sugar and give it a good stir. 

  • Heat the pan, melt the unsalted butter, and add in all the golden syrup. Mix the bicarbonate of soda to 2 tbsp. boiling water, and then add to the pan. When you add the bicarbonate – water mixture, the whole mix gets frothy. Do not Panic!
  • Make a well in the middle of the dry ingredients and pour in the heated mixture of butter, golden syrup and soda bicarbonate. Using a large wooden spoon, stir them all until the whole mixture is combined.
  • Make small balls out of the mixture and gently press in the middle of the palm and place it 2.5cm/1″ apart to allow room for spreading on the greaseproof sheet. Bake in batches for 8-10 minutes until golden.
NOTES:

Alternatively, dip the wooden spoon in hot water and press the dough mixture on the greaseproof sheet, if you do not want to use your hand to do the same.
I had tried using a silicon baking sheet for placing the scooped mixture for one of the batches, but the cooking didn’t seem uniform.
